Background: Robust second generation bioethanol processes require microorganisms able to ferment inhibitory lignocellullosic hydrolysates. In this study, the inhibitor tolerance and flocculation characteristics of Saccharomyces cerevisiae CCUG53310 were evaluated in comparison with S. cerevisiae CBS8066. Results: The flocculating strain CCUG53310 could rapidly ferment all hexoses in dilute acid spruce hydrolysate, while CBS8066 was strongly inhibited in this medium. In synthetic inhibitory media, CCUG53310 was more tolerant to carboxylic acids and furan aldehydes, but more sensitive than CBS8066 to phenolic compounds. Despite the higher tolerance, the increase in expression of the YAP1, ATR1 and FLR1 genes, known to confer resistance to... |

Background: Wine fermentation is a dynamic process and yeast has a precise genic regulation system that allow them to coordinate the gene transcription levels. However, the fermentation stage at which there is a great variation in the genic expression associated to a particular enological trait is often unknown and there are no simple experimental approaches to define it. Results: To identify the most adequate stage in which to evaluate the expression of the genes associated to specific enological traits we identified three stages of fermentation using the industrial strain EC1118. These stages, called early (0-16.4 hrs), middle (16.4-88.7 hrs) and late (88.7 hrs onwards), were characterized according to changes in the speed of CO2 production. The greatest... |

ABSTRACT Capsicum baccatum is one of the main chili pepper species grown and consumed in South America. In Brazil, C. baccatum var. pendulum is widely cultivated, especially “dedo-de-moça” type. For most horticultural crops, including Capsicum species their diversity remains under-explored for traits related to fruit quality, since over the past half century breeding efforts have focused mainly on good agronomic performances. The investment in screening traits such as flavor, nutritional compounds and antioxidant content in traditional varieties is very important to support fruit quality breeding efforts. Thus, the objective of this study was accessing the variations into content of soluble solid, acidity, capsaicinoid, vitamin C, total phenolic compounds... |

The wild yeast Saccharomyces cerevisiae AK46 was isolated from cherry fruits and commercialized as baker's yeast. We isolated a 2-deoxyglucose (2-DOG)-resistant mutant of AK46 (MCD4) and evaluated its leavening ability in bread dough. Our findings show that the maltose utilization of MCD4 was significantly enhanced in the presence of glucose and α-glucosidase activity was increased by approx. 1.6-fold compared to that of AK46, indicating release from catabolite repression. In addition, baking performance results using the sponge dough and no-time dough methods showed that the CO2 production rate of MCD4 was increased by approx. 1.6-fold (sponge and dough method) and the specific volume of bread was increased by 6.3% and 7.8%, respectively. These results... |

In this study baker's yeast was evaluated as a substitute for live Dunaliella tertiolecta algae in the culture of the brine shrimp Artemia . Consumption of fresh baker's yeast resulted in poor growth and survival of brine shrimp. However, the nutritional value of the yeast significantly improved after complete removal of the yeast cell wall by enzymatic treatment. Baker's yeast was also made digestible for Artemia by simple chemical treatment which did not reduce rigidity of the yeast cell. The external mannoprotein layer of the yeast cell wall is probably the major barrier to digestion by Artemia . Chemically treated baker's yeast offers promising possibilities as a substitute for... |

ABSTRACT The present study was conducted to evaluate the performance, carcass yield, and histomorphometry of the small intestine of broilers fed yeast sugarcane supplemented with enzymatic blend from 22 to 42 days of age. Seven hundred broiler chicks were distributed in a completely randomized design in a factorial design (2x3+1), two levels of the enzyme blend (0 and 200 g/ton), three protein levels (0%, 6% and 12%) and a control diet. The level of 6% yeast showed higher feed intake and weight gain after 33 days. From 22 to 42 days there was no significant effect (p<0.05) to the use of yeast in animal performance, carcass yield and cuts. At 42 days an interaction between the factors for width and crypt depth in the duodenum and jejunum, respectively,... |
